The average age is about 35 years. The training system is \u201cCordon Trained\u201d (Spurred Cordon).<\/p>\n<p><strong>Grape harvest<\/strong>: The grapes are harvested when the correct sugar level and the perfect aromatic profile of the grapes are detected. The harvest is strictly carried out by hand in small perforated crates.<\/p>\n<p><strong>Winemaking<\/strong>: The Sangiovese, destemmed and lightly crushed, is transferred by gravity to the winemaking facilities, where, in steel tanks, it undergoes a brief cold maceration and then ferments at a controlled temperature for a period of about 15 days.
